Ca. 100 FIP-AIU/mg (FIP-α-amylase inhibitor unit) using porcine pancreatic α-amylase. This highly purified Acarbose, a pseudotetrasaccharide, inhibits α-amylases [EC 126.96.36.199], α-glucosidases [EC 188.8.131.52], saccharases [EC 184.108.40.206]. Used e.g. in enzymatic conversions and assays where α-amylases, α-glucosidases or saccharases interfere with the reaction.
